This dish uses three types of small plates to separate and display the ingredients. The round plate is relatively small, so the turnip cake is cut into long strips to enhance the difference in shapes. Ingredients: XO sauce, white radish, rice batter, cornstarch, etc.

Instructions: First, clean and peel the white radish, then grate it into fine shreds. Mix the cornstarch with the rice batter and set aside. Stir-fry the shredded radish briefly, then add water and bring it to a boil. Pour in the rice batter and cornstarch mixture, stirring continuously until it thickens. Pour the mixture into a mold and steam for about 40 minutes to make the turnip cake. Once done, remove and cut the turnip cake into long strips, then pan-fry it with XO sauce. Other ingredients like chives, celery, bean sprouts, and shredded eggs can be added according to personal preference.

Turnip cake is usually prepared in large pieces, but when paired with unique dishware, varying the size can make it more interesting. For instance, the XO turnip cake can be cut into small cubes to match the design of a rectangular plate.

Plating Method

① Start by laying bean sprouts on the bottom, then add a layer of chives and celery. Place the radish cakes, which have been cut into squares and fried, neatly on top of the chives and celery.

② Add a layer of golden egg shreds on top of the radish cakes as a garnish. At one end of the long plate, place a spoonful of XO sauce for dipping. A few peas on the side can be added for a pop of color.

Plating Method

① First, place the deep dish on top of the shallow dish, then arrange the radish cakes in the deep dish one by one.

② Position the radish cakes in the center of the round plate.

③ Place the stir-fried chives and celery on one side of the four corners of the platter.

④ On the other side of the four corners, place the bean sprouts and shredded eggs. Finally, garnish the radish cakes with cilantro and XO sauce for decoration.
