Instructions: Steam the potatoes and mash them, seasoning with salt. Peel the shrimp, coat them with olive oil and pepper, and pan-fry directly. Add broth to the shrimp shells and simmer until it reduces to a thick, aromatic, coffee-colored sauce, becoming shrimp gravy.

Plating method

① Use two spoons to shape the mashed potatoes, forming three potato balls. Place them at three points on the plate, so that their center lines intersect in the middle of the plate.

② Drop some shrimp sauce into the spaces between the potato balls, and use the back of the spoon to draw lines towards the center.

③ After finishing the design, six radial lines will appear on the plate.

④ Near the center of the shrimp sauce lines, place pan-seared shrimp with their tails pointing upwards, letting them meet at the center, drawing visual focus. Finally, decorate each potato ball with a potato flower, aligning its direction parallel to the ball, creating a corresponding 3D height.

Plating Tip: To make the potato flower, thinly slice the potato into approximately 0.1 cm thick pieces. Stack two slices together with a herb (in this case, cilantro) in between as decoration. Bake until the edges turn brown and crispy.

Scene 2: Playful Imagery in Plate Design

To express the playful image of shrimp swimming in water, a rectangular white plate with a recessed center was chosen. Shrimp sauce was used to draw flowing, water-like lines, creating a sense of movement. The naturally curved shrimp tails mirrored the upturned corners of the rectangular plate, enhancing the dynamic visual effect.

Plating method

①Place three generous drops of shrimp paste at three spots on the plate, and use the back of a spoon to draw curved lines from each drop.

②Using two spoons, shape the mashed potatoes into balls. Place three potato balls along the curves of the shrimp paste. Then, position the shrimp on top of the mashed potatoes, with the tails pointing upward and the heads alternating in direction—left, right, and left—creating a sense of dynamic movement rather than a static look from uniform alignment.

③Finally, add three fresh horseradish leaves on top of the shrimp, and the plating is complete.
